How to Make Cookie Dough Brownie Bombs

These irresistible cookie dough brownie bombs make an addictive treat for a simple dessert or for a large party. The insides are full of gooey, eggless chocolate chip cookie dough, and then covered with a brownie shell which is dunked in melted chocolate bark. Garnished with extra chocolate chips on top, it's a total chocolate bomb all in one bite.

EditIngredients

  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Pinch of salt
  • 1 package fudge brownie mix (8 ounces), baked and cooled
  • 1 package (6 ounces) chocolate almond bark
  • 2 cups miniature chocolate chips (optional)

EditMaking the Cookie Dough Balls

  1. Cream the butter and sugar. In a medium-sized bowl, beat the two ingredients together with an electric mixer. Mix until the ingredients are light and fluffy, taking about 2-3 minutes.

  4. Add only a cup of chocolate chips to the dough. Mix one last time until fully mixed. The cookie dough should have no flour streaks and should be combined together properly. #Cover a baking tray with foil or parchment paper.

  5. Scoop the cookie dough onto the baking sheet. Using a mini ice cream scoop, scoop balls of dough onto the sheet. Leave each cookie dough ball two inches apart from each other.

    • Keep the balls medium-sized. Avoid making them too big or else they'll be harder to handle, but don't make them too small, either.
  6. Freeze the cookie dough balls for about an hour. This helps firm the cookie dough and makes it easier when it's time to make the chocolate bombs.

    • If the brownie cracks slightly, roll it around with your fingers to help surround the truffles.
  4. Melt the chocolate bark in a microwave. Place it in a microwave-safe bowl and heat until fully melted, taking about 2-3 minutes and stirring frequently.

EditTips

  • You may have leftover cookie dough which can be made into other desserts or it can be eaten at once.

EditWarnings

  • Make sure you use fudge brownies rather than cake ones. Cake-y brownies won't flatten as well and won't wrap around the truffles.
